Lumpia Family

First in the recipe card series, Lumpia: a staple Filipino dish for any gathering! I’ve combined many recipes to form my own tasty filling. Lumpia Family are characters that are both cute and (when mixed together) delicious. Read below how to make your own lumpia.


Ingredients: (makes 70 lumpia)

  • 2 pounds of 80% lean ground pork

  • 1 pound of shrimp

  • 1 yellow onion

  • 2 heads of garlic

  • 1 inch of ginger

  • 1 medium carrot

  • 1 cup cabbage

  • 1 tablespoons of chicken bouillon powder

  • 1 teaspoon of salt

  • 1 teaspoon of black pepper

  • 35 frozen lumpia wrappers

  • vegetable oil

Tools:

  • food processor

  • large shallow pot

  • tongs

  • baking sheets

  • large mixing bowl

  • storage containers or gallon Ziploc bags

  • small bowls for each vegetable and one for seasonings

Instructions

Step 1:

Individually mince each vegetable in food processor: onion, garlic, ginger, carrot, and cabbage. Place each ingredient into separate bowls and set aside.

Step 2:

Remove shells and de-vein the shrimp. Then mince in food processor until paste-like consistency.

Step 3:

In a small bowl, mix salt, pepper, and chicken bouillon powder.

Step 4:

In large mixing bowl, combine ground pork and shrimp. Then evenly sprinkle half of each of the minced vegetables and half of the seasoning mixture onto the meat. Stir until well combined. Repeat with the remaining half of ingredients.

Step 5:

Whisk two eggs in a small bowl.

Step 6:

Separate the frozen lumpia wrappers, one at a time. (Tip: it is easier to separate wrappers when kept frozen together, so don’t thaw the wrappers!) Lay out one wrapper (in a diagonal if square). Fill middle of the wrapper with 3/4 inch thick filling (from the left corner to the right corner of the diamond). Then tightly fold over the bottom flap over the filling. Next, brush egg onto top edge of the wrapper. Afterwards, tightly roll towards the top. Place finished roll onto baking sheet. Repeat until baking sheet is full.

Step 7:

Place lumpia on baking sheet into the freezer. Chill for 30 minutes.

Step 8:

Take chilled rolls and cut each in half. Place halves into storage containers or Ziploc bags. Keep frozen until ready to fry. (If frozen in airtight container, lumpia freezes well for months!)

Step 9:

Fill pot with 1 inch depth of vegetable oil. Heat oil to 375 °F.

Step 10:

Place lumpia into pot one at a time. Fill pot ensuring rolls are not touching one another. Adjust heat to maintain 375 °F. Flip after 6 minutes if frozen (4 minutes if directly after Step 8). Then fry again for same time.

Step 11:

Line platter or pan with paper towel. Place cooked lumpia onto platter to drain excess oil. Once cooled serve with sweet chili sauce for dipping.
